Elaboration: The grapes selected with the utmost care are subjected to a delicate pressing. Next, the first fermentation takes place in stainless steel tanks at a very low temperature, between 12-14ºC, to enhance the creation of secondary aromas. The blended wine undergoes the second fermentation in the bottle, following the traditional method in our underground cellars. Paying homage to our origins as a distillery, we have once again made wines at “Sol i Serena” in damajoanas in the open air, to create a special dosage for this cava, just as we did in the past with our Brandy .
