Manual, in October. The wine is made with different grape varietals located in the Les Gavarres Natural Forest Park in the “Empordà” (Girona province in Catalonia)
Production:
The grape is harvested entirely by hand and each varietal is fermented separately. Once the grapes have been destemmed, they are placed in the upper section of a stainless-steel double fermentation tank. Alcoholic fermentation is begun at a controlled temperature of between 22 and 25°C, and lasts from 7 to 10 days. Malolactic fermentation takes place in stainless steel tanks.
